¾ cup chopped onion
1/3 cup chopped red pepper (sweet)
2 cloves garlic, minced
1/2 tsp. dried oregano
1 chipotle chili
2 ½ cups chicken broth or vegetable broth
1 cup frozen corn
2 – 15 oz cans black beans (undrained)
Place all ingredients in a saucepan. Bring to a boil. Lower heat to low, cover and simmer for 1 hour. Salt to taste. Blend 1 cup of soup in a blender. Add back to sauce pan, stir and serve
